Snickerdoodles
1 c butter
1 1/2 c vanilla sugar
1 t vanilla
2 t baking powder
2 eggs
1/2 t salt
2 3/4 unbleached all purpose flour
coating
1/3 c sugar
2 t cinnamon
Preheat oven at 400.
Hand whisk flour salt and baking powder. Set aside.
With mixer, beat butter and sugar until smooth.Add eggs. Add vanilla extract. Add flour mixture slowly, beat until combined. Roll 1 T balls into cinn sugar, space 1 1/2 in apart on sheets, flatten each cookie slightly with a glass.
Bake 8 - 10 min, until edges are firm and center is still slightly soft.
